Recipe – bacon cups

There’s nothing quite like experimenting in the kitchen and coming up with something tasty and different. It’s even better if you can put some of your favourite ingredients together to create something new. Here’s a little savoury treat I came up with the other day – served singly, perhaps with some asparagus, they’d make a lovely diner party starter; or serve two per person as part of a main course with baby new potatoes and steamed vegetables (that’s what I did – and it was delicious!).

Bacon Cups
Makes 4


  • 4 slices bacon
  • 2 large eggs
  • 100g sweet potato (peeled and cubed)
  • large handful of spinach
  • 30g grated cheddar
  • 5 g parmesan
  • pinch chilli powder
  • spray oil

Serve hot or cold


  • Cook the sweet potato till tender
  • Wilt the spinach
  • Preheat oven to 180C
  • Spray a little oil into a cupcake tray, or, if you don’t have one, use silicone cupcake molds
  • Cut the rind off the bacon and arrange one slice in a cup formation in each mold
  • Pop the bacon cups in the oven for 10 minutes to start cooking the bacon (liquid may gather in your bacon cup at this point – just pour it out to prevent your cups becoming soggy)
  • Lightly beat the eggs, then add the sweet potato, the spinach (squeezing out as much water as you can beforehand), cheddar, Parmesan and chilli powder. Stir well
  • Spoon the mixture into the bacon cups and return to the oven for 15 – 20 minutes
  • Serve hot or cold

I think I’ll be making variations on this recipe often – perhaps I’ll try adding mushrooms, onion or sweetcorn to the mixture to see how that works. As it is, these are mouth-wateringly good. I hope you’ll try them – if you do, please let me know what you think!
